This cocoa powder is an excellent addition to any bakery. Cocoa powder is extracted from the cacao bean, and is a remaining dry substance that has a distinct, rich taste. Dutch-processed cocoa then goes one step further and is treated with an alkali to neutralize its acids. This process creates a rich, dark color and mild, subtle flavor that complements other baking ingredients. It is best suited for use along with baking powder, rather than baking soda.
